New Jersey’s known for its tomatoes and asparagus, its strawberries and blueberries.
Now local farmers have a new bumper fall crop – designer cauliflower.
Pick your color:
White for traditionalists.
Orange for the carotenoid craving crowd.
Purple for wine lovers.
Legates Farm Market in North Cape May grows them all. They’re seasonal items, and very popular.
According to Wikipedia, the colorful cauliflowers are more than just a pretty face.
Purple cauliflower has the same antioxidants found in red wine and red cabbage.
Orange cauliflower far surpasses its white relative in beta carotene, a carotenoid that turns into Vitamin A. And they both taste like – cauliflower.
Any cauliflower is good for you. Just don’t boil it. All the good stuff will go down the drain.
Steam, microwave or bake.
A little grated Parmesan cheese doesn’t hurt.
