Freda's Specialty and Wedding Cakes

The pastry chef at Freda's Cafe in Cape May and former assistant pastry chef at New York's Plaza Hotel has made countless brides - and their guests - beam with her towers of confection. She's done everything from classic, tiered white on white cakes to a cake for an Indian themed wedding. She created an artist's palette cake for one happy couple and cookie wedding favors for another celebration. Carol starts by baking a butter pound cake in vanilla, chocolate or banana and then carefully hand decorating it with rolled fondant, butter cream and royal icing. Some cakes have handcrafted flowers, others are topped with fresh roses. She also has incorporated sentimental items into the cake decoration.
